You're not supposed to. The game makes sure you don't, because the quest objective doesn't say "you beat the legendary Xan" or something along those lines. You're not supposed to beat some bosses, at least, not then. Edit: I believe you mean Sepulchure and Fluffy are undefeatable, Xan outside of the war (in the War Shrine) is defeatable. In that war quest he is not suppose to be beat.
