el Camino de Santiago is not one trail but many different routes (about 8 official routes in France, 15 in Spain and many that start in other European countries) so there is no 'start' only a destinaton - the tomb of St James in Santiago de Compostela. One could say that el Camino starts from your front door! In order to earn a certificate of completion - the Compostela - you need to walk the last 100km to Santiago or cycle the last 200km.
