Assuming that God really did create the world in six days and rested on the seventh, how would they have known that Saturday was the seventh day, rather than Wednesday? the Bible does not tell us and merely assumes that the Hebrew people knew which day this was. Remember that the start of the week is only a convention. It seems likely that Christian Churches adopted Sunday as their Sabbath because the Bible gives that as the day of Jesus' resurrection, whether or not the Bible instructed them to make the change.
