Sound is how humans recognise a disturbance in pressure within the air which is sensed by the ears. In water the individual molecules are closer together as they are held together by London Forces constantly forming, breaking and reforming so a disturbance will be transmitted faster than in a gas where the individual molecules move independently of each where disturbance rely on collisions. The rate at which sound travels in air is given by the formula sqrt(gamma*gas constant*absoloute temperature) where gamma denotes the ratio of specific heats.
