Instead, in BOTH cases, it says they AREsouls.

Humans ARE souls (Genesis 2:7kjv)

Animals ARE souls (Genesis 2:19kjv Genesis 9:10kjv(the word 'soul' is here translated 'creature'- Hebrew:Nephesh, Greek: psyche).

In both cases,'Soul' means the creature itself (the "whole creature"), or the life lived as that creature, and as such, indicates that a soul can die (Ezekiel 18:4kjv, James 5:20kjv, Ecclesiates 3:18-20, Revelation 16:3kjv) Much like the word 'life', It can mean the individual (one 'life' was lost) OR the life lead by that individual (he enjoys 'life', he lost his 'life', he poured out his soul(life). However, that said, The Bible only promises 'everlasting life' to obedient mankind (John 17:3, John 3:16) not to the animal population.

The answer will be determined by how one translated the Hebrew term 'nephesh' and the Greek equivalent 'psuche' which are commonly defined as 'breath or wind, a soul and sometimes erroneously as spirit.' In these cases then an animal is like all land breathing creatures which we see in the account of Noah and the Flood:

Genesis 7:15 (New King James Version (NKJV) And they went into the ark to Noah, two by two, of all flesh in which is the breath of life.

However, mankind is unique in that we are made in God's image and have a spiritual component translated from the Hebrew 'ruach' and the Greek equivalent 'pneuma' which means 'spirit' (Note: it also means breath, air, wind and context is important - see link below how man is unique). In this sense then animals do not have this 'spirit' component in them but do share the 'breath of life' all land breathing creatures do. We can see this here:
