A decent place to farm medium hides would be the Yeti cave in Hillsbrad Foothills. The only thing to watch out for is the really big elite Yeti there. He will destroy you if you are not severely over leveled for the zone, but once you get into the cave he will not bother you. The yetis in and around the cave have a chance to drop medium hide when you skin them. It is a low chance, but there are a lot of Yeti's in there and they re-spawn fairly quickly. Remember, hides have a lower drop chance than leather.
