The First Order are the male Friars, the Second Order are Religious Sisters, and the Third Order are the lay people. Nearly all Religious Orders have a lay branch, you would need to contact the order that you are interested in to find out what the requirements are.

St. Nicholas of Myra was a Catholic bishop in what today is modern Turkey. He did not belong to any particular religious order.
There are approximately 5,900 Dominican friars and 3,000 Dominican sisters around the world as of today. These numbers may vary slightly depending on the sources.
A secular priest is a priest who does not live according to a rule of a religious order, society, or congregation of priests. He is a priest who does not take the vows of chastity, poverty and obedience of the members of a religious order, but instead promises obedience to a diocesan bishop and to live a celibate life. Most parishes are administered by a secular priest and parish work is his main canonical mission. Today, a secular priest is often called a diocesan or archdiocesan priest. Secular priest is differentiated from regular priest (regular priest meaning a priest living according to a rule, regula in Latin, like the Franciscans, Dominicans, and Jesuits), better known today as religious order priest. Today, there is not much difference in the academic training of a secular priest and a regular priest because they often study in the same college and graduate theology schools/universities though they may differ in the mission, vision, and spiritual formations since a regular priest has additional training unique to the order, congregation, or society he belongs to.
A secular priest is a Catholic priest who serves in a diocese or parish community and is not a member of a religious order. They focus on pastoral work and serving the spiritual needs of the local community, rather than living in a religious community with a specific charism or mission.
Convents were often very beneficial for the communities in which they existed. Many orders are active in particular fields. The Dominicans are a teaching order and are still active today ( I was taught by Dominicans). The Sisters of Charity are teachers but also do much work in hospitals; some are actually run by the order. These are only two examples. Nuns helped the poor and ill who may not have had families to do so; they taught; they farmed and provided food; they were ambassadors of faith. Look up Mother Theresa to get another view.

Both Orders are apostolic, that is, seeking to win souls to Christ. The Dominican Order from its beginnings emphasized prayer, study, and preaching. One of the Order's mottoes is Contemplare et contemplata allis tradere, which means, "to contemplate and to share with others the fruits of contemplation." The Franciscan Order in its beginnings emphasized evangelical poverty; the brothers did not own any books except the breviary and the Bible. Instead of studying and preaching in words, their witness was was to show all the world what it meant to live for God alone.
