Quarks (at low energies) are permanently locked away in hadrons, the most common being protons and neutrons. They cannot come out of them because of a property of quantum chromodynamics (QCD) known as color confinement. Quarks have color charge, which comes in three varieties: red, green, and blue. All of them form into a white charge. QCD states quarks do not leave this configuration unless they have high energies, known as asymptotic freedom.

Quark is a type of soft curd cheese. The closest substitute for it if you cannot find Quark is ricotta, or blended and strained cottage cheese.
If a meson were made up of a quark and an antiquark with different colors but the antiquark's color was not the anticolor of the quark, then the meson would not be color-neutral overall. This configuration would violate the requirement for color neutrality in hadrons as defined by quantum chromodynamics.
An antibottom quark (or b-bar quark) is the antiparticle of a bottom quark. It has the same mass as a bottom quark but opposite electric charge and other quantum numbers. When a bottom quark meets an antibottom quark, they can annihilate each other and produce energy.
