An enzyme, present in gastric juices, which begins the hydrolysis of proteins. It is one of the only enzyme that can work well in highly acidic environments. As far as I know, Pepsin does not exactly produce anything. But, it has enzymatic activity. It is the activated form of pepsinogen, produced in the stomack, and is part of the digestive juices.
