Spectroscopic surveys are based on the fact that the colors you see in everything are not in the object being observed, but is the result of the fact that the elements that make up the object, are reflecting that part of the spectrum of light that strikes it. Spectroscopic analysis will give researchers an idea of the basic makeup of the star.
Its all to do with the composition of the star, the different elements present in the star will give of different spectra - spectroscopy. Different atoms and molecules give off energy, relating to the unique arrangements of electrons in orbit around their nucleus, the higher energy will be towards the blue end of the spectrum and the lower energy towards the red end.
So the light received from a star will show what atoms are present when the light is spread out into into its different parts. Other physical properties can also be derived from this method, such as the velocity of the star and their temperature.
The three properties that you can determine by observing the star's spectrum is the stars surface temperature. The chemical makeup of the photosphere and its Doppler shift of spectrum lines.
