The air pressure keeps the water from falling out of the glass. The atmospheric pressure i.e. the air pressure outside the glass is greater than the water pressure inside the glass so it holds the coaster onto the glass.

With a card of somewhat greater weight the width of the capillary rim increases (but there is additional volume expansion to counteract the weight of the heavier card). Since the capillary force decreases with increasing width of the open edge, the weight range of cards is limited. Eventually it can no longer prevent air from rushing in. But with cards with low weights, thus a thin edge and as a consequence a high capillary force it works fine.
