Very few today worship the sun and there are no religions which exist today which have evolved from sun worship into something else. What normally happens is that additional deities are added over time onto a pre-existing religion so that what it ends up with is polytheism (this is accretion or addition, although some may define it as evolution). The original god or gods are still worshiped and have then become part of a pantheon of gods.
According to the Christian concept of God, these have evolved entirely from man and his ideas about God and they have undergone a type of development according to man's ideas, commensurate with how these have developed. In contrast, God in the Christian view is the one who has made the sun and the universe and everything else that exists. This view has not undergone any evolutionary or developmental process but was stated in Genesis 1 - the same Genesis 1 that many Christians still believe today.
