Both materials are good materials for a sleeping bag. Choosing which to use is more of a personal comfort question. If you like to be really warm, I would suggest a fleece liner. If you prefer to be cooler then the silk liner is for you. Although, silk does last as long as fleece, silk tends to easily rip and is not as durable.
You can blend silk with wool when spinning yarn, without reaction.

In my opinion silk is better as it is smoother. But it all depends to what u are using it for or what you are doing.

You can use a neck pillow. You might also try sleeping on your back or sleeping on a pillow with a silk pillowcase.

Polyester fleece (polar fleece) is knitted. It is made in a similar way to sweatshirt material.
