It depends on your personal tastes, but the least attended park was Animal Kingdom (the park consistently runs a distinct fourth of the four parks in Disney World, though fourth at Disney World is hardly a disgrace, since it's still in the top ten in the world as a whole.) That may be changing with the opening of the new Avatar section.
If you have only one day and want the most "Disney" experience possible, I would probably suggest the Magic Kingdom, but even better advice would be for you to go to the website, look at the attractions in each area, and decide which ones appeal to you most.
