In my opinion, and I've learnt a fair amount about all three of the languages, they all have their ups and downs.

First you need to know a little bit about Chinese: when you learn the speaking part, you're either going to learn Canton Yue (Standard Cantonese) or Beijing Mandarin (Standard Mandarin). If you speak one, you won't understand the other, but you may be able to understand what the other one writes. Both use the same writing system, but generally Cantonese is considered the hardest out of the two because there are up to nine tones (while mandarin only has six).

Anyway, the pros and cons:

Mandarin and Cantonese are the only tonal languages of the others, meaning that what you say is also based on in what tone you say it. I find the writing system of Chinese beautiful, and for Japanese you will need to know the strokes of Chinese lettering and for Korean you should also (both languages' writing systems are based on Chinese). The language is also one of the most beautiful sounding in my opinion.

Japanese is not tonal, and the sounds that come out of your mouth don't have to specific. However, a lot of what's understood in Japan doesn't come from general words and pronunciation, but a lot comes from grammar and polite uses of those words. When learning Japanese, there is no way possible to read a textbook for fourteen years and then go out and say something to a Japanese person and have them think you're perfect, because you'll end up getting something wrong, usually in the way of politeness. With Japanese, you have to learn Kanji (the Chinese lettering), Katakana and Hiragana writing systems - however the latter two are very similar and don't take all that long.

Korean is not tonal, and at first strikes you as a language that can come in any tone, but you have to be very careful of the sounds that come out of your mouth. For example, when saying the word (romanized) "anyong haseyo" (polite form of hello), you can't just pronounce it straight out like that or no-one will understand you really. You also can't just say what it sounds like to English speakers when said really fast, which is pretty much "anyo sayo". You have to have the throaty sound where the "ha" is and your voice goes down a bit on the G and it's not really pronounced, etc. However, the time you spend on proper pronunciation could be put in the time you would spend on the writing of the other languages: it's helpful, but not necessary, to know Hanja (the Chinese lettering); you could get away with just knowing Hangul, which is pretty simple.

I suppose that in short words, I would say that Korean is the easiest and Chinese is the hardest (particularly Cantonese), but that's just me. I hope you get an idea from what I've told you about the languages. :)
