If you just want to reduce fat, you can use Egg Beaters. Two ounces equals one egg. They still have egg whites as an ingredient. If you want to avoid eggs completely and you're dipping the shrimp to coat them in bread crumbs or some other coating, you could use buttermilk instead of egg and milk. Dip the dry shrimp in flour first, then in buttermilk, then in the breadcrumbs or other coating. It should stick just as well as with the egg. I use this coating process for fried chicken and it works great.
