Because cells are bathed in an aqueous solution, and something hydrophobic provides a good barrier to allow cells to selectively decide what gets in and what goes out. Lipids are suitably hydrophobic for this purpose

lipids have two parts: a hydrophobic head and a hydrophilic head, so when you put it in water the heads form together to try to stay away from the water while the tails stay outside and it forms a nice little wall the makes up cell membranes.
