The statistics are probably not kept by province. But it would be a close race between the Westland and Southland. Fiordland has a great rainfall, for the same reason as does Westland, there is a warm current flowing up the west coast of the South Island, and water evaporated from this is elevated over the alps, and results in intense rainfall on the W of the Alps.

Hi, I couldn't find an answer for all of Ireland, but for last years rainfall broken down by province, check out http://www.met.ie/climate/rainfall.asp, the Met Eireann rainfall report 2008.
The two biome's that gets the most rainfall is the tropical rain forest and the temperate deciduous forest.

The parishes that gets the most rain in Jmaiaca are Portland, St. MAry and St. Ann.
The greatest amount of rain falls in Fiordland and the Southwest coast of the South Island. Milford Sound in Fiordland has a mean annual rainfall of over 6,000 mm and the highest recorded annual rainfall was 18,000 mm at the Cropp river in the Hokitika catchment on the South Island's West Coast.
