I have been led to believe that Odysseus' most difficult journey was the one back home. He had to battle a cyclops, listen to beautiful voices and keep himself on the boat. That could not have been easy for him.
He never does physical battle with any gods, but his main conflict is with Poseidon, God of the Sea. He does however do battle with several non-human creatures, such as the cyclops Polyphemus, the sea-serpent Scylla, and guards of the Underworld.

The battle with the Cyclops.
I wouldn't call it a battle, per se, but Polyphemus was the Cyclops that imprisoned Odysseus and his men. Odysseus put out his eye and tricked the giant into saying that No Man hurt him when calling for aid.

Antinuous
Blinds the cyclops, survives Scylla ( but doesn't really fight it because he would lose all his men rather than 6. The giant Laestrygonians destroy Odysseus' fleet and eat most of his men. He never really fights anyone, he is famed as a brain over brawn type e.g. He blinds the cyclops to escape, rather than fight an enormous man who is stronger than of all of his men in the cave combined.
