I have also learned that Professor Layton 4 will be released in Japan November 29 2009. Professor Layton 3 was released in Japan in November 2008. It is not expected to be released in the UK until next Fall. Professor Layton 2 was also released in Australia on September 24 2009.

I also assume you are talking about her past. It is explained in PLatSF that Emmy was accused of a crime she didn't commit, and a young Layton defends her and solves the case. From that day, she has been trying to work with Professor Layton and help him in return. I hope this is what you were asking. Being in Europe, I haven't received the next instalment in the series( Mask of Miracle) So anything that happens to her in that, I am not aware of. :)
