Leafy Green Vegetables are basically the leaves of any plant which we normally eat, They are very high in Anti-oxidants and include -but are not limited to: Brocolli Leaf, which is not to be confused with the brocolli bud the part at the top which you normally eat. Brocolli does have leaves but brocolli bud is not a leafy green vegetable, though it causes gas and keeps your seratonin down, which can cause depression if brocolli is eaten too much. Brocolli leaf is very sweet and tasty and secretes an oil when steamed! Brocolli should not be eaten together with resveratrol or turmeric or with any MAOI medications.

Other Leafy Green Vegetables include:

  • Dandelion Greens (the leaves) which are the best for you,
  • Collard greens,
  • Artichokes are a Flower and not a leaf,
  • Common Nettle,
  • Alfalafa,
  • any kind of Sprouts,
  • Colrabi,
  • Kale (there are many varieties and my favorite is Dinosaur Kale - A very dark, sweet green that is amazing when steamed or lightly stir-fried!),
  • Chard is a leafy green but, red chard has an enzyme which interferes with digestion in some people.
  • Spinach,
  • Watercress,
  • Rutabaga,
  • Brussels Sprouts (which are baby cabbages and have lots of nutrition and are very easy to digest unlike mid-size or full-grown cabbage. As a side note any vegetable as a baby is more nutritious and more tender. )
  • Turnip Leaves,
  • Bok Choi/Bok Choy,
  • Rape' Leaf (rape' is like a tiny brocolli),
  • Arugula is very spicy,
  • Pea Vines and Leafs,
  • Mitsuna and Clover are both high in Vitamin C and Calcium and are very tangy,
  • Basically, any salad green besides ball or iceberg lettuce,
  • Hydroponically-Grown Butterleaf Lettuce is becoming increasingly popular and is very tasty!

In the U.S. the most common "greens" are kale, collards, turnip and brocolli greens, mustard greens, and the lettuces.
