I myself am quite skilled as the Teutons and the Byzantines so I have a defensive civilization and an offensive civilization, so just let me post my strategy for the army I use as an example, the Britons (British)
They are a fairly easy army to master and are quite strong. Their use of longbow men and archers in general is second-to-none giving them a highly superior advantage over many civilizations who have to just blindly charge in at close range and try and get lucky they caught you off guard. For a basic strategy with the Britons just balance archers and swordsmen first, defend for a good period of time, then break out and destroy them.
That's an offensive strategy, so if you are an offensive civilization, your best unit would probably be a conquistador from the Spanish.

Decent armour
Use of horse enables escape
Cons:
Not very accurate at very long range
Exact speed as heavy cavalry
Just a heads up, in order to shift the Briton strategy to Spanish replace Longbows with Hand Cannoneers (keep Conquistadors minimal) and keep building Champions & Halberds
Defensive civilizations just camp out and defend, that's it.
Best unit for them is probably a good monk/teutonic knight combo for the Teutons
Pros:
Teutonic knights can stall while monks heal
Monks can convert members of attack forces to make a pincer.
These are the best units for me, but for a rock solid answer it all depends on you.
