There is the one being baptized, the one doing the baptizing, usually at least 2 witnesses, God, Jesus and the Holy Spirit are also involved, but you might not count them as people in regards to your question.
Not really. The dove is used as a symbol for the Holy Spirit which is very heavily involved in Baptism.

From a scriptural standpoint, there is no reason for a baptism to be private.It CAN be, if the person wishing to be baptized is highly self-conscious or (in extreme cases) fearful of retribution, but in the New Testament record, baptism involved hundreds, and even thousands of people at a time (Acts 2:41).
