A long haired dog is quite simply a long haired dog (or Dog with long hair). Last time I checked there were no special names for long haired dogs but of course there are lots of breeds of long haired dogs. Hope this helped :)
No, actually, short haired breeds, such as the Chihuahua, are a better choice for somebody with allergies. Long haired dog breeds, such as the Pomeranian or the St. Bernard, shed more hair more frequently, which will create more of a problem to some one allergic.

American bulldogs have short, coarse fur. They shouldn't shed as much as long-haired dogs because their fur is short.
Maybe one of the long hair breeds which are used for show like the peruvians or silkies, but if you want to sell them as pets maybe you should condider English (short haired) which are the most popular pet breed.

Yes. They can be shaved. However, unlike other long haired breeds, the fur of the ragdoll does not mat or knot so shaving is really unnecessary.
All breeds are nice, but if you brush out the fur of a long haired, it looks really nice, plus then you could do it's hair
