School hours, days, and holidays are decided by the state department of education. Schools are required by the state to have a certain number of days in school and they even have to document the minutes. Each school is audited for time, hours, and days to be sure they have met the requirements. A particular school sets a calendar with these things in mind. If days are lost due to weather or other conditions the time has to be made up by the school.

What rights have been taken away from Christians in the U.S.?

No rights have been taken. That would be discrimination and against the law. The majority of the country sees itself as a Christian nation so that makes them the majority view. Christmas is celebrated every year for weeks, Easter is celebrated every Spring. For both holidays they are federal holidays and schools, post offices, and government services are closed. Jewish and Muslim holidays are not Federal holidays and people are often denied those days off for their religion, but Christianity has no problem with any religious beliefs or holidays.
