Henry Bessemer developed an inexpensive way of making steel from iron. Henry Bessemer is famous for enormous industrial importance because he lowered the cost of production steel.
The main difference between cast iron and mild steel is the carbon content. Mild steel has a lower carbon content than cast iron. This makes cast iron brittle, while mild steel is much harder.
When Bessemer developed his method of making steel the use of iron ore grew and so did making railroads, multistory buildings, and bridges.

I don't think anybody wants to change steel to iron. However, changing iron to steel is done a lot because steels (of which there are many variants) have properties superior to iron. For example, manganese steel is what railway lines are made of and they are tough and not brittle, ideal for this purpose. Mild steel, which is very commonly used for 'iron' objects has some carbon in it which gives it good properties for everyday use. Stainless steel has chromium in it which gives it anti-rust properties.
Sir Henry Bessemer invented the furnace which was instrumental in making the steel manufacturing process more effective. But it was Andrew Carnegie who implemented the furnace in his steel plants along with a few other innovations which made the steel manufacturing process cheaper.
