What i think that nosebottled dolphin to defend itself is by biting their enemy and swim away as fast as they can.

The nose of a dolphin helps the sonar travel. Also, the nose is good for digging in the sand below the ocean serface
To protect themselves they can nose-ram, swim away fast, and live in pods.
