I'm probably going to get into trouble for this, because DiBella's has this reputation as a century-old restaurant that looked much as it does today, with the 1930s & 40s theme, BUT...
I worked making subs and stocking shelves in the original deli in Rochester in the early 80s. It was called Bella Delicatessen then (so named because it was harder to pronounce than "DiBella Delicatessen") and it was owned by Mike and Mary DiBella. It's true that they bought it from a previous owner, who MAY have started it back in the early 1900s, but it had always been a delicatessen that sold cold cuts, pop, beer, and Italian goods like olive oil and pasta and the like. The submarine sandwich aspect of DeBella's was more or less a sideline that grew into their major source of income for the store. When the DiBellas retired, I was told by a customer (who was in a position to know, as he sold ads for the store in a publication I worked on) that a nephew bought the deli and converted it into a full-time Sub Shop, and then to a successful chain. Although the origin story might not be totally legit, they ARE great subs.
