No one exactly knows, there is no record of it, due to it being so old. Wrestling was one of the first hand to combat sport's that in history, it dates back before the 400 BC. But in time differently styles and version type's of wrestling were invented.
Steer Wrestling
Calf roping and steer wrestling.
Since "kind of cows" could mean anything from "kind of breed" to gender, I'll give you what I think are used in steer wrestling: Since the word "steer wrestling" seems self explanitory, I would assume that steers are used in steer wrestling. However, a little bird told me that heifers can also be used in this rodeo sport. Now as for the Breeds, they would mainly use crosses or purebred Corriente and Texas Longhorn cattle.
Bull riding, is the most dangerous. Steer wrestling is also pretty rough.
im pretty sure its the same as steer wrestling. its when they are running after a steer and they jump down onto the steer at a gallop and wrestle the steer to the ground.
these following are event that would be held at a pro rodeo Calf roping, steer wrestling, team roping, barrel racing, saddle bronc riding, bareback riding, bull riding, and sometimes steer tripping these event would be held at a novice rodeo or armature rodeo all the same up top and goat tying, pole bending, ribbon roping, breakaway calf touch.

Steer wrestling, also known as bulldogging in which a horse-mounted rider is chasing a steer. After catching up with it the rider dismounts and tries to wrestle it to the ground.

Calf roping, Barrel racing or other western gaming, bull riding, bronc riding, bare back bronc, team penning, steer wrestling, lamb riding (kids sport). Other events could include roping competitions, wild horse races, children games etc.
Depends on the rodeo. A typical PRCA Rodeo will have seven events: Tie Down Roping (aka calf roping), Team Roping, Steer Wrestling, Bareback Riding, Saddle Bronc Riding, Bull Riding, and Ladies Barrel Racing. Some PRCA rodeos also have Steer Roping. A youth Rodeo may have the seven events above plus Pole Bending, Goat Tying, Goat Tail Tying, Break-A-Way roping, Steer (and/or calf) Riding, Ribbon Roping, and Flag Race. College Rodeos have the seven events above plus Goat Tying and Break-A-Way Roping. Local rodeos may have other events like Wild Cow Milking, Wild Horse Race, Chariot and/or Chuck Wagon races. It depends on the rodeo.
