A wine known as Blanquette de Limoux, which was produced by the Benedictine monks at an abbey in Saint-Hilaire (France), is the earliest white sparkling wine for which there is documentary evidence. The monks kept records of their methods; the earliest mention of the sparkling wine is from 1531 (about a century before Dom Pérignon was born).

The French didnt have thick strong bottles that would of supported it.

Contrary to common myth, Dom Perignon did not invent champagne. Sparkling wine was actually invented by the English, who considered effervescent wine to be defective. However, many years later, Dom Perignon did develop the technique of blending sparkling wine, used stronger bottles, and developed a system for preventing corks from popping out of the bottles.
