Robert de sable is the well known enemy of altair
If you mean the game, and if you mean the assassins, then it is Al Mualim (translated to "the teacher"). If you mean the templars, then it is Robert IV de Sable.
Robert de Sable, Altair's final assassination target, is in Arsuf. The location is only unlocked for the final assassination sequence although I think it shows up on the map throughout the game anyways.

You can only get to it after Altair fails the third and final assassination in Jerusalem. If you exit Jerusalem and go into the Kingdom and check the map, you'll see that the way to Arsuf has opened up. It's Southeast of Acre.
Although the main assassin character may not be real, it is pretty historically accurate game. A lot of things from the first game is real, including Al Mualim. The home castle in Maysaf where the headquarters were was the real headquarters for the Assassins. And all if the assasinated people in that game were real people, including Robert de Sable, who was in fact the the Grand Master of the Nights templar. With Ezio, a lot of the Assasins were real too, but werent actually Assassins. Everything that happened with the Borgia family was real and historicaly accurate (except of course the apple)
