There's really no one best rider in the world. Equestrian sports encompass many different disciplines, and even within those disciplines there really isn't one 'best' rider. You should probably research the individual disciplines you're focusing on, and find out the top riders in those categories.
Each year, century, month, decade, new best horse riders develope all over the world. The best rider doesn't always stay that way, as other riders can beat them. There are different top riders every time.

There is no way to narrow it down to just one. There are many very good riders that are at the top of their game. The best barrel racer is not the same as the top hunter rider, and so on.

When a horse's ears are slanted backwards, the horse is paying attention to something behind him. If you are on the horse's back, this is good unless you are competing in hunter/jumper classes where the judge wants to see the ears forward which tells you that the horse is looking for the next jump. However, if the ears are flat back against the horse's head, the horse is warning you or another animal to back off.

In comparison to its size, the horse is not the highest jumper in the world. Proportionally, it is the grasshopper.
