Jazz is usually considered a musical improvisation and is therefor different every time it is played. However as a composition that has all the elements of jazz then Rhapsody in Blue by Gerschwin has to be my choice in my humble opinion.
Jazz origins are thought to have been an African American invention. Jazz was a word for sex between consenting couples and was then used to describe the music and the form of dance originating from it. There is Traditional Jazz and Modern Jazz and then the Jazzing up of an original old tune. Sincopated music such as Scott Joplin's could also be considered of a jazz style because it was a popular extention of rag-time a predecessor of jazz. Of course some big bands would resort to jazz-like rifs in some swing numbers. It is therefor subject to some fuzzing of the edges. It is easier to list jazz artists than to list jazz composers although Dave Brubeck with his 'Take Five' might qualify as this is scored and notated.
