I'm not sure specifically how many there are. There are 31 chapters, but most of these chapters contain many proverbs (plus, the chapter and verse distinctions were not in the original text). I've been looking for this too, but I can't find it. Guess I'll have to count.
The verse 1 Kings 4:32 writes: "He spoke three thousand proverbs and his songs numbered a thousand and five". The 'He' in this verse being described is King Solomon. In earlier verses it describes him wiser than anyone else which is clearly Solomon as described in 1 Kings 10:23 with "wisdom greater than other kings of the earth".
