Salad may seem like a big bowl of greens to you, but vegetable salad doesn't have to be bland. Add a few flavorful ingredients and you have a main meal with broad appeal. Cobb salad is an excellent example. First developed in 1937 at the Brown Derby hotel in Los Angeles, California, this distinctive salad has everything you could hope for in a meal. It contains bacon, grilled chicken, egg, avocado, tomato, cheese and lettuce. Separately, these ingredients are pretty tasty; when they're combined, they become a feast for the taste buds.
Cobb salad is relatively easy to prepare. Although it's traditionally arranged so each ingredient is displayed in a separate little pile, some modern variations included a layered Cobb salad in an attractive glass bowl and a tossed version for a maximum number of ingredients per bite.
There's some debate about the perfect dressing for Cobb salad, but Blue Cheese or Roquefort (a premier blue cheese) are among the favorites. Since this strong dressing isn't to everyone's taste, use what your or your family likes best.
Cobb Salad Recipe
Ingredients
6 cups iceberg lettuce, shredded (about half of a large head) 3 cups romaine - or other specialty lettuce, chopped (about 1 head) 7 strips bacon, cooked and crumbled 3 oz. blue cheese or Roquefort cheese, crumbled 3 eggs, hard-boiled, peeled and cut into cubes 2 boneless chicken breasts, cooked and cut into strips (best with skin removed) 3 tomatoes, peeled, seeded, and diced 1 avocado, peeled and cut into 1/2 inch pieces 3 tbsp. chives, minced fine Salt and pepper to taste
Directions
Combine lettuce varieties and arrange on a large platter. Place bacon, cheese, eggs, chicken, tomato and avocado on lettuce in groups. (Note: Some cooks like to arrange the ingredients in rows. Drizzle dressing on top. Garnish with minced chives.
Other options:
Instead of using diced tomato, use halved grape tomatoes (about 20). Add black olives as an ingredient. Top salad with seasoned croutons. Substitute sharp cheddar (shredded) for the blue cheese.

Note: Leftovers hold up well in the fridge overnight if lightly tossed with a little lemon juice.
