To begin with Little Red was not a written tale, it was a tale somewhat similar to our ghost stories, just with more of a point to it. The original Little Red was never (from what i have seen) written.
The first writing of it would be the Grimm version, and that is not in the slightest bit the same thing as the original.
'Le Petit Chaperon Rouge' by Charles Perrault and known as 'Little Red Riding Hood' in English was published in 1697 as part of a collection of stories, 'Contes de ma Mere L'Oye' (Tales from my Mother) and first published in English in 1729.
Probably the most commonly retold version today was called 'Little Red Cap' and was part of a collection of folk tales published in 1810 by Jacob and Wilhelm Grimm (The Brothers Grimm).
The Brothers Grimm wrote the story of Little Red Riding Hood in the early 19th century, around 1812-1815. They included it in their collection of folk tales titled "Children's and Household Tales."
Like most of the classic fairytales, it was written by The Grimm Brothers first.

Fairy Tales
The story of "The Three Little Pigs" that is commonly known today was not written by the Brothers Grimm. It is a traditional fairy tale that has been passed down through oral tradition and has many versions. The Brothers Grimm, Jacob and Wilhelm, were known for writing and compiling fairy tales in the early 19th century, but "The Three Little Pigs" was not among their collected tales.
Wilhelm Carl Grimm and his brothers, Jacob and Ludwig, are known for compiling and editing German folktales into a collection known as "Grimm's Fairy Tales." These stories include both well-known tales such as "Cinderella" and "Little Red Riding Hood" as well as lesser-known folktales passed down through generations. The stories often feature moral lessons, fantastical elements, and characters facing challenges to overcome.
The brothers Grimm didn't actually write fairy tales, they merely complied existing tales into an anthology.
Rumplestiltskin was one of the stories in the first Brothers Grimm book called Children's and Household Tales published in 1812.
The Grimm Brothers were a set of brothers who are famous for the Fairy Tales they published. The fairy tales that most people are most familiar with were European fairy tales. It is important to note the Brothers Grimm did not write the fairy tales they published they just collected them from many parts the world.
