A lot of personal information about the disciples are unknown. Of the jobs mentioned for the disciples, four (Peter, Andrew, John, and James) were fishermen. Matthew was a tax collector. Simon was called a zealot, which was a political extremist, although not a job title. Even though Matthew was a tax collector, Judas Iscariot was the treasurer of the group, so he was probably more learned than most, although we don't know what job he had.

What were the disciples doing when Jesus picked them?

Mostly the disciples were working at their various trades. Matthew was conducting his tax-collecting business when Jesus called him and James and John were fishing.
