It is not known who many of Arthur's peasants were named in the legend. The story is, after all, what we would call a romance. Those don't really talk about the people with low stations in life. They tend to idealize things by focusing on the wealthy people. There is one story though, about a knight called Sir Tor, that mentions Tor's stepfather as a cowherd named Aries. It also mentions Tor's mother, but I cannot remember her name. Other than this, the peasants seem to be nonexistent. If you are thinking of the real King Arthur, there is less help there because even the information about the king himself is scant. The peasants would not be mentioned in nearly all the documents.
