Castles sieges depend on being able to deny the castle the means to feed itself. It can be attacked either by breaching a wall or climbing over it. The doorway is usually the strongest point of the defences. It may be possible to undermine a wall, causing it to collapse. Gunpowder was the reason why castles, in time, became undefendable, if artillery can make a breach then the wall is no longer secure from attack. It depends on which time in history the castle was attacked, as well as its site. Obviously some castles were easier to defend than others.

They would use a tactic called undermining.
An archer would use his/her bow and arrow to fire at attackers attacking the castle. Most of the archers would try to protect the castle. Some would attack castles. They would try to aim for the head and maybe the feet. Some attack/defend on horses.
