Ludwig van Beethoven wrote numerous songs which were not orchestral or instrumental pieces. These are primarily the lieder and volkslieder, of which there were around 158. However, he also wrote the opera Fidelio, and the Mass Missa Solemnis.
I know of Opus 86: Mass in C and Opus 123: Mass in D Missa Solemnis, Opus 85: Christ in the Mount of Olives. I don't know if there are any more.
Beethoven wrote two full masses. One was merely named 'Mass in C' and it wasn't favourably received at first. His second was the massive piece the 'Missa Solemnis' which is still one of the most famous mass settings nowadays.

No, he did not. You can often hear that "Requiem for a dream" soundtrack is in fact "Summer Overture" written by Mozart but in fact there is no such Mozart's composition like "Summer Overture." Soundtrack for "Requiem for a dream" was composed by Clint Mansell. And no, it also is NOT remix of any Richard Wagner piece. "Requiem for a dream theme," "Lux aeterna," "Summer overture" or whatever you call it was composed in the late 90's by CLINT MANSELL.
Yes, Gloria Gaither wrote the lyrics to the hymn I Then Shall Live, the music is the tune Finlandia.

The text that Haydn uses in Gloria is a sacred latin text that is of the traditional mass that dates back hundreds of years. I don't think the text is credited to anyone and the same text is used for all Gloria settings.
