Why is that in Germany the sweet and sour pork you get at Chinese Restaurants is made with pig testicles instead of pork shoulder?

If I’m going to hope to go on a trip to Munich Germany later this year, I’m going to have to make the American version of this homemade because having food with pig testicles doesn’t sound very appetizing to me.
