Without being able to diagnose, I would say you may have an intake manifold vacuum leak. This could be resolved when the engine heats-up, expands the parts and the vacuum leak disappears. If it is a newer engine with electronic engine controls, the sensors take over when it is warm and will control the fuel flow to off-set the vacuum leak and allow it to run (crappy and very fuel-inefficiently, but run nonetheless). Again, this is only one possibilty in a pile of possibilities...Have it looked-at and find-out for sure!

What is the sensor called that keeps the car from going dead in a ford escape?

It could be related to the idle air control valve. I don't know what the sensor is called but if your car's valve doesn't work it doesn't get air into the engine properly while idle so the car dies eve if the engine sounds like it's turning smoothly. Hope that helps.

How do you adjust the idle on Ford Contour?

The engine idle is controlled by the ECU, and is not adjustable. If the engine is not idling properly, either too fast or too slow, take it to a shop and have them check the OBDII codes.
