It's not 100% accurate to call it the "least important organ". It would be better to say that we don't know what it's for, and that it can be removed with little to no impact beyond that of the surgery itself. It's at least possible the appendix has some minor function that we don't understand (one hypothesis is that it's a strategic reserve of beneficial gut bacteria, so that it can serve as a source for recolonization if the intestinal flora are cleared out by illness).
