Why are AM and PM not opposites?

Unlike "night" and "day" the terms AM (ante meridiem) and PM (post meridiem) only define the periods before noon and after noon (these clock times must of course vary by location on the turning Earth).

So they are only opposites with reference to the arbitrary time of noon, which astronomically is when the Sun is the highest in the sky for the day.
