They make the user's life easier. Let's say you make a product out of ten different chemicals. You put five of them in one reactor vessel and cook them for two days until they finish reacting into an intermediate, the other five into another reactor vessel to make the other intermediate and cook them for a week, then mix the products of the two pots and cook for a day to make the end product. It's easier and quicker to let a specialty chemical maker produce the two intermediates, and you do the final reaction to make the end product.
Another advantage is specialty chemicals increase the production capacity of your plant. Instead of having a reactor for intermediate A, one for intermediate B and one for the end product, you now have three reactors for end products. Alternately, you can reserve one reactor for end product and use the other reactors to make those great new products your research department invented that you haven't put into production yet because you didn't have anywhere in the plant to make them.
