Plane mirrors don't form real images. Concave mirrors and convex lenses do.

Without a real image, you have nothing to expose film to, nothing to project

onto a screen, nothing to capture on a CCD or vidicon, and nothing to look at

with an eyepiece.

In order to gather as much light as possible (the goal of telescopes), telescopes must be built larger. Larger lenses eventually start to sag under their own weight, diminishing their ability to focus light effectively. Also, multiple lenses must be used to focus light in the same place, and each lens surface must be ground and polished individually. This increases the cost. A mirror can easily be supported underneath, and only requires a single surface to be ground and polished. Therefore, for both optical and economic reasons, mirror-based telescopes are both the best for focusing light and the most cost-effective in larger apertures.
