Elephants essentially walk tip-toed and the rest of the foot is made up of fatty-fibrous tissue. This tissue acts as a shock absorber, which also helps to muffle sound, and the shape of the foot makes it relatively easy for elephants to walk in mud. I can only assume the 'flat shape' evolved to accomidate the elephants weight.

It's so they get held up better, because without good sturdy legs, the elephants would fall because of their body weight!
