Foam - styrofoam is an excellent insulator. With a hot drink - you want it to remain hot - so you do NOT want heat to move out of the drink to the cooler outside. The styrofoam vastly reduces this heat flow.

With a cold drink, the reverse is true. You want it to remain cold so you do not want heat to move from your hand or the outside atmosphere into the drink. The styrofoam vastly reduces this heat flow.
