Because molecule was originally defined as a cluster of two or more atoms held together by a covalent bond. So it's not accurate if we say it molecules of ionic compounds. The true sentence is polyatomic ions.

Ionic bonds are electrostatic in nature and the electric field around an ion is spherical, the force of attraction is "non-directional" - this causes large scale lattice structures to form. Ions pull in other ions from all directions. Covalent bonds are directional.
