legumes have a symbiotic relationship with nitrogen binding bacteria which live in nodules on the roots. if one grows legumes in a nitrogen poor envirument which includes pretty much all not fertilized land and instead of harvesting the leguems crop uses a rotor to plow them into the soil one gets a nitrogen enriched soil. nitrogen being the main element (by quantity) plants need from the soil this can be very beneficial and is often refered to as green fertilizer. bear in mind that in a nitrogen rich envirument this symbiotic relationship will not develop i.e it is a facultative symbiosis and not an obligatory one.

When you plant legumes you exhaust the soil of the certain nutrients that feed them, so if you plant them again, you will have a smaller harvest. But, when you plant other things that don't use the nutrients that legumes use, then those nutrients can come again so you can get a better harvest. This goes with most crops.

legumes contain nitrifing (makes nitrates) bacteria in their root nodules this increses the nitrate content of the soil making it more fertile. as plants need nitrites to make protein and DNA along with other nitrogen containing compunds.
